Pizza
Made some good pizza today, so I’m keeping the recipes here for my reference:
Basic sauce:
1/2 onion, minced
1 or more cloves garlic, finely minced
2 tablespoons olive or vegetable oil (more if needed)
1 can tomato sauce (16 oz.)
1 can tomato paste (6 oz.)
2 teaspoons sugar (optional) it takes out the bitterness of the tomato
1 teaspoon basil - dried
1 teaspoon oregano - dried
1/2 teaspoon salt
Basic dough:
3 3/4 cups (500 grams) bread flour
2 1/2 teaspoons teaspoons (10 grams) instant or other active dry yeast
3/4 teaspoon (10 grams) table salt
3/4 teaspoon plus a pinch (about 3 grams) sugar
1 1/3 cups (300 grams) warm water
Extra-virgin olive oil for the pans
For the yeast, I used the Edmonds Instant yeast, and used 1 packet. For the sauce, I used one of the Watties “thick puree” cans and no paste. Didn’t add any salt to the sauce, a bit less sugar, and also added a bit of white wine vinegar.
I ended up making 10cm diameter pizzas, which are friendlier for the kids, and also cause I don’t have a big pizza peel. Preheated a standard oven tray in the oven, and just used a spatula to get them in and out. Ended up making a couple of garlic breads, and a few capsicum / meatball pizzas. YUM!
