Bagels!

I was inspired by an Iron Chef America battle, where Morimoto’s team made bagels in less than an hour.  These bagels were made using a Hamelman recipe, basically just flour, water salt and yeast.

Images (left to right) show kneading, dough, on tray to go to fridge overnight, boiling, resting in ice bath, tray for oven, baked, cream cheese and jam.
